I've had this saskatoon berry jam in my cupboard for quite some time now and have been very curious to see what it taste like. I decided to make a classic baked jam treat: jam thumbprint cookies. These types of cookies used to be one my favorites growning up. My mom would buy this big round tin from the grocery store when I was younger and it would be filled with an assortment of cookies but I would always eat the jam filled ones first. This recipe is easy enough to make and the cornmeal gives the cookies a nice texture. Whats great about these cookies is that you can use any type of jam depending on your preference.
I went to this restaurant one night and ordered this drink called Matty's Mint Mudslide and it had to be one of the best beverages I've had. It was like a mocha milkshake with a hint of mint flavor. I was craving one of them today and was too lazy to go back to the restaurant so I decided to recreate the drink into a cookie form. They turned out great, very soft and chewy, and definately satisfied my craving. The were full of chocolate flavor and had just enough hints of mint and coffee flavors that weren't too overpowering.
I decided to try out a new recipe the other day from a cookbook that my mom gave me a long time ago. The recipe didn't exactly turn out as planned (I've decided to blame the recipe in the cookbook rather than blame myself on the mistake) and I ended up with a plate full of cake crumbs. I hate wasting food and I don't have that much money right now to spend on ingredients, so I could either A) eat all the crumbs to myself or B) find some other recipe to use them in. Thanks to my wonderful friend Google, I was able to discover this website and used the recipe called 'Cake Crumb Cookies' from ICES article 1-94 by Carl Nixon-TX.
It's the season for cookies! What better way to start it off than with loads and loads of Chirstmas decorated sugar cookies. The wonderful company of Ann Clark Cookie Cutters sent me some samples to try out and I decided to put them to the test today! I've made these peanut butter cookies before and they were so good. I had some left over Golden Grahams cereal lying around from another recipe I made and I wanted to use them up (because I bought the family size box). I decided to crush them up and combine them with this delicious peanut butter cookie recipe from Cookie Madness. The cookies once again turned out great and the Golden Grahams added a nice crunchy texture to it. I just substituted the 1 1/4 Cups of peanuts and 1 1/3 Cups chips for 2 Cups crushed Golden Grahams. I got this recipe from my 'Joy of Cooking: All About Cookies' cookbook but changed it around slightly mainly because I was missing some of the ingredients. The original recipe is called Classic Biscotti (Reduced Fat) because it is made with oil instead of butter, but I didn't have enough flour or spices so I changed it into my own creation calling it Low Fat Whole Wheat Biscotti. Biscotti is essential already a low fat cookie to begin with but this version is even better for you and tastes just as good. It produced crunchy flavorful cookies that go great with tea or coffee. Feel free to add nuts, spices or chips to give them your own personal flavor.
My mom has an accordian file at home full of magazine recipe cut-outs, friends recipes, hand written recipes, and many more. So I decided to venture into the dessert file and borrowed a couple of recipes that she had written 'excellent' beside. The first recipe I made was called whipped shortbread because you beat the batter until it has the texture of whipped cream. This shortbread recipe was 'exellent' just like my mom had written. It was buttery and flakey, which just melted in your mouth. I am not too sure which magazine my mom clipped this recipe out of but it looks very old and used a brand called Gay Lea butter, which I've never heard of before but give this recipe a try, it is really good!!!
I felt like a hearty cookie today so I decided to make a breakfast cookie since I've never attempted to make one before. There are many really good breakfast cookie recipes out there, and I particularily like the ones found at Cookie Madness. But the recipe that I choose, I found in my '100 Best Bake Sale Recipes' cookbook. I changed the recipe slightly and the cookies turned out really well. The were big enough to fill you as a snack, the were hearty enough with just the right amount of oats and raisins, they were sweet enough from the combination of honey and sugar, and the were just the right texture - a mix between chewy and crunchy from the Corn Flakes. I know I havn't supplied you folks with a recipe for a while but that doesn't mean I havn't been baking...so this is my long over do recipe for you! I found this recipe very long ago when I just started to begin my baking madness on All Recipes. The recipe is called Butter Balls I and I've made them before a couple of times and each time they have turned out great, I've even played around with the recipe and made these cookies previously. The cookies are very butter (not in a bad way) and have great chewy/cakey texture. I made mine a bit bigger than the recipe calls for but I like big chewy cookies the most.
