Sugar Free Applesauce Cake with Butterscotch Icing
My boss at work asked me to bake a cake for his daughter's 1 year birthday, but there were a few restrictions on the ingredients. He asked the cake to be apple flavored, have no or little sugar, and to be ladybug themed. So all week I have been testing out sugerless apple cake recipes to see which one is the best. This was the second one I have made so far and although the texture was good, it didn't have as much flavor as I would have liked it (but I have a huge sweettooth). I added a butterscotch glaze just for fun to give it some more flavor. The cake overall was good if your not that big into sugar, it has a nice light texture with hints of cinnamon and apple to it. I have sample #3 in the oven right now and I will let know how it turns out! Here is the recipe for the cake (I omitted the raisons and the nuts) and below is the recipe for the butterscotch icing, which I got from my 'Better Homes and Gardens Cookbook' but substituted chocolate chips for butterscotch chips.
Butterscotch Icing
1/2 Cup butterscotch chips
2 Tbsp butter
1 Tbsp corn syrup
1/4 tsp vanilla
1) In a small saucepan over low heat combine all ingredients and continue stirring until chocolate melts and mixture is smooth
2) Immediately pour over cake and enjoy!
