Spice Cupcakes with Maple Galze

It was my Grandma's birthday this week and my mom asked me to bake her some cute cupcakes rather than make a cake. So I decided to make a classic white cupcake with a twist. This cupcake is like an apple fritter doughnut mixed with a pancake breakfast (if you can imagine that...lol). This cupcake is moist and has a mouthfull of flavors while the glaze is not overly sweet with just the right amount of maple flavor. I think the cupcakes would taste really good with tiny pieces of chopped apples mixed into them but I didn't have enough time to do that, sorry Grandma!

Spice Cupcakes with Maple Glaze
For the Cupcakes:
4 ounces butter, room temperature
1 Cup white granulated sugar
1/2 Cup brown sugar, lightly packed
1 Large egg
2/3 Cup milk
1 tsp vanilla
1 1/2 Cups all-purpose flour
1/2 tsp pumpkin pie spice
1/4 tsp cinnamon
1 1/2 tsp baking powder
For the Glaze:
2-3 Cups powdered sugar
2 Tbsp maple syrup
1/2 tsp vanilla
2-3 Tbsp milk

1) Preheat oven to 350F and grease a 12-cup muffin tin or use paper liners and set aside
2) In a large bowl beat butter and sugars until well mixed
3) Add egg, milk, and vanilla and beat until well mixed
4) Add flour 1/2 Cup at a time, stirring after each addition until flour is incorporated
5) Add pumpkin spice, cinnamon, and baking powder stirring until everything is evenly mixed
6) Evenly spoon 1/4 Cup of batter into each muffin tin and bake for 22-25min or until tops are evenly browned and toothepick inserted in the middle of one cupcake comes out clean
7) Let cupcakes cool completely on a while rack before glazing them
For the Glaze:
8) In a small bowl combine 2 Cups powdered sugar, maple syrup, vanilla and 2 Tbsp milk and stir mixture well, keep adding more powdered sugar or milk until desired consistancy is reached
9) Either dip each cupcake into the glaze or spoon 1 Tbsp worth of glaze over each cupcake and let harden (I added a candy flower on top of each cupcake while the glaze was still wet to make it look prettier, then dusted them lightly with powdered sugar) then enjoy!
