The Somewhat healthy Cookie

My friend called me the other day telling me that he was looking on my website for a healthy cookie recipe.  He said the only one he could find that wasn't too sweet for him was the breakfast cereal cookie but he didn't have any Corn Flakes on hand.  So I decided to make this cookie just for him.  I decided to call it the 'somewhat' healthy cookie because I did use a fair bit of sugar still and I added chocolate chips (but only because my boyfriend asked me too) but feel free to omit them if you like or substitue them for nuts. 

The cookie was good, kinda like a peanut butter oatmeal cookie, it had a good chewy texture on the inside and crunchy texture on the outside.  Let me know what you think or if you have any good healthy cookie recipes of your own I would love to hear them.

The 'Somewhat' Healthy Cookie

1/2 butter, room temperature
1/2 Cup peanut butter
1/2 Cup brown sugar, firmly packed
1/4 Cup maple syrup
1 Large egg
1 tsp vanilla
1 tsp baking soda
1/2 tsp pumpkin pie spice
1 tsp cinnamon
1/4 tsp salt
1 Cup all-purpose flour
1/3 Cup whole wheat flour
1 1/3 Cup oats
(Optional: 1 Cup chocolate chips or 1 Cup of your favorite nuts)

The Somewhat healthy Cookie

1) Preheat oven to 350F and line a cookie sheet with parchment paper
2) In a large bowl beat butter and peanut butter until creamy
3) Add brown sugar and maple syrup and beat until well mixed
4) Add egg and vanilla to mixture and beat until well mixed
5) Add baking soda, pumpkin pie spice, cinnamon, salt, all-purpose flour, and whole wheat flour into mixture and stir until everything is evenly combined
6) Stir in oats (and chocolate or nuts if desired) until evenly mixed
7) Scoop 1/4 Cup of dough (I made these cookies big because I figured that since they are 'somewhat' healthy for you, you could eat more lol) onto prepared cookie sheet and bake for 10-12min or until cookies are evenly browned on the bottom
8) Cool cookies on cooling rack then enjoy!
