Peanut Butter Cup Cookies
My girlfriend came over last night for a girl's night and wanted me to make something sweet to nibble on while watching our movies. Two of her favorite treats that she likes to enjoy are chocolate chip cookies and Reese's peanut butter cups, so I decided to combine the two and surprise her with this delicious treat. These peanut butter cup cookies are not like the traditional kind that involves using a peanut butter cookie batter. Instead, I decided to make a regular cookie dough loaded with the flavors of brown sugar, butter, and vanilla, while letting the peanut butter cups stand out on their own. The cookies were so good, I think my girlfriend ate three even before we had dinner. The had a great chewy/cakey texture and weren't too sweet, with just the right amount of sugar, chocolate, and peanut butter flavors all
intermingled. Here's the recipe below for you to sample these sweet treats too.
Peanut Butter Cup Cookies
3/4 Cups butter, room temperature
3/4 Cups brown sugar, firmly packed
1 Large egg
1 egg yolk
1 tsp vanilla
1 1/2 Cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
2 Cups of chopped Reese's Peanut Butter Cups (I used 16 regular sized cups cut into 6 pieces each)
1) Preheat oven to 350F and line two cookie sheets with parchment paper
2) In a large bowl cream butter with an electric beater, then add sugar and blend until well mixed
3) Add egg, egg yolk, and vanilla and beat until well combined
4) Add flour, baking soda, and salt and stir with a wooden spoon until just combined
5) Add chopped peanut butter cups and stir in until evenly distributed
6) Scoop large heaping Tbsp of dough onto cookie sheets and bake for 12-14min
7) Let cool on sheet for a few minutes then transfer to cooling rack and enjoy!
