Peanut Butter and Honey Multigrain Rice Krispie Squares
Although I did enjoy using the multigrain rice krispies to make the classic rice krispie squares recipe with marshmallows, but I thought I could enhance the flavor of the cereal better by adding some ingredients that would best compliment the flavors already in the cereal. The cereal itself has honey aromas in it, so I thought why not add some honey to this recipe, and there is also a strong multigrain taste so I thought it would be best complimented with a peanut butter flavor. These bars are similar to the scotcheroo's that I've previously made and worked out really well. I made them for a friends BBQ and they got gobbled up faster than the brownies that were at the table as well (and who doesn't like chocolate?). The bars had great flavor and great texture, and for my opinion, I think this recipe works way better with the multigrain rice krispies rather than the classic rice krispie marshmallow recipe. So I've posted the recipe below for you in case you buy a box of this delicious cereal.
Peanut Butter and Honey Multigrain Rice Krispie Squares
1/4 Cup corn syrup
1/4 Cup honey
1/4 Cup white granulated sugar
1/4 Cup brown sugar, lightly packed
1/2 Cup smooth peanut butter
1/4 tsp vanilla extract
3 Cups multigrain rice krispies
1) Line an 8in square pan with parchment paper and set aside
2) In a large size saucepan mix together corn syrup, honey, and both sugars over medium heat and stir until mixture just begins to bubble
3) Once bubbling, remove from heat and stir in peanut butter and vanilla, and stir until well mixed
4) Mix in cereal until well mixed and pour mixture into prepared baking pan
5) Press mixture down gently and set aside to cool (you can put in the fridge for a while instead if you prefer) until mixture is set, then cut into squares and enjoy!
