Peanut Butter and Chocolate Crunch Bars
These were awesome! They were a mixture between a Reese's Peanut Butter Cup and a Crispy Crunch that I found in my 100 Best Bake Sale Cookbook. They were so easy to make and satisfied any sweet tooth out there. I originally made them for girls night but at last minute It was cancelled so I ended up bringing them over to my boyfriends house and all his roommates enjoyed them instead. There's not much more to say about these except that they were fantastic, so I've posted my half size version of the recipe below, but if you want the full size recipe just double it and enjoy more treats! On a side note, if you don't have any graham cracker crumbs like I didn't just place some graham cracker cookies in a large ziplock bag and crush them with a rolling pin until they form into crumbs.
Peanut Butter and Chocolate Crunch Bars
3/8 Cups butter, softened
1 Cup peanut butter (divided)
1 Cup powdered sugar
1 1/2 Cups graham cracker crumbs
1 1/2 Cups semi-sweet chocolate chips
1) Cream together butter and 5/8 Cups of peanut butter with an electric beater until smooth.
2) Beat in 1/2 cup powdered sugar until well combined
3) Using a wooden spoon, mix in remaining powdered sugar and all of the graham cracker
crumbs until well mixed
--> If desired mix in 1/2 cup of chocolate chips into the peanut butter mixture or just leave them out like I did to create a more contrasting look<---
4) Press peanut butter mixture into an 8in square pan lined with parchment paper and set aside
5) Over low heat melt remaining peanut butter and remaining chocolate chips (or all of the chocolate chips if you never used any yet) in a small saucepan
6) Once smooth and melted pour chocolate mixture over peanut butter mixture and spread evenly
7) Place in fridge for about an hour then cut into squares and place back in fridge to set, I found it too hard to cut into the bars after leaving them in the fridge for 3 hours and had to let them sit for a bit before cutting into them. Enjoy!

Chocolate & Pb are allways good, but if it has a bit of crunch, even better! Clumbsy Cookie
