Oatmeal Chocolate Chip Cookies
I havn't made a classic, old-fashioned style cookie for a while so I thought I would make one of my favorite types - an oatmeal chocolate chip cookie. Oatmeal raison cookies are good too and I do love chocolate chips cookies, so why not combine the both and make a cookie full of oatmeal and chocolate. These cookies turned out just like I wanted them too. They had a great chewy texture from the brown sugar and a slight crunchy texture from the processed oats. The flavor was just the right amount of sweet and oat combination that was neither too overpowering with just the right amount of chocolate goodness. I'm going on a road trip next week and these are the perfect type of cookie to pack up and eat while on the road. I am definately going to make these next week and here's the recipe for you to try in case your planning to travel anywhere sometime soon as well. Oatmeal Chocolate Chip Cookie
3/4 Cups butter, room temperature
3/4 Cups firmly packed brown sugar
1 Large egg
1 tsp vanilla extract
1/2 tsp baking soda
1 Cup all-purpose flour
1/8 tsp salt
1 Cup Oats, processed in a food processor
1 Cup milk chocolate chips
1) Preheat oven to 350F and line two baking sheets with parchment paper
2) In a large mixing bowl beat butter and sugar until light and creamy
3) Add egg and vanilla to butter mixture and beat until well mixed
4) Add baking soda, flour and salt to mixture and stir with a wooden spoon until dough comes together
5) Stir in food processed oats until well mixed then add chocolate chips and stir until well mixed again
6) Spoon heaping Tablespoon portions onto cookie sheets (you should get about 2 dozen cookies) and bake for 10-12min (mine took 11min)
7) Let cookies cool on pan for 2min then remove to a cooling rack and enjoy!
Oatmeal chocolate chip cookies are perfect for a road trip! I might also make a pumpkin or banana bread and wrap up some slices for the road too. Have a great time! xo-CookiePie
