Mr.Big Mini Chocolate Cupcakes

My friend Dulce at work has been asking me to make her mini chocolate cupcakes for a long time now.  I had a couple Mr.Big chocolate bars in my cupboard and I wasn't too sure what I wanted to do with them; then I remembered how much Dulce likes Mr.Big bars, so I thought why not make her some mini Mr.Big chocolate cupcakes.  These little treats turned out really well and Dulce was pleasntly surprised!  I used a cake mix box but altered it to make the cakes more moist and to make them more like a Mr.Big bar.  Here's my adapted version of this delicious treat!

Mr.Big Mini Chocolate Cupcakes

1 box chocolate cake mix
3 Large eggs
2/3 Cup sour cream
1/3 Cup peanut butter
1/3 Cup water
1/2 Cup vegetable oil
2 Mr.Big chocolate bar cut into pieces

1) Combine all ingredients (except Mr.Big bar) in a large bowl and follow baking instructions on the back of the box
2) Fold in Mr.Big bar pieces and bake according to box directions
3) Once cupcakes are cooled from oven, ice them with favorite chocolate frosting and decorate with pieces or Mr.Big chocolate bar and enjoy!
