Mocha Muffins with Coffee Streusel
My mom used to buy me these mocha muffins from a local bakery when I was younger that I would eat for breakfast, lunch, and even as a snack - they were that good. They had big dome tops that were loaded with flavorfull streusel and chocolate topping. The muffins themselves were prefectly moist with a great coffee flavor and a hint of chocolate goodness. Unfortunately the bakery no longer exsist and I have yet to find a muffin that is compareable. After googling a bunch of muffin recipes, I finally put together a recipe that I thought would be closest to the original mocha muffin that I loved. To my surprise, the muffins turned out great with a very similar resemblance to the original muffins from the old bakery. Although the muffins didn't have as big of domes as the original they were still just as flavorfull as I remember with the perfect amount of coffee, spice, and chocolate. The muffins were moist and crumbly, just how I like them, with a great mocha flavor and an extra hint of chocolate from the chips. I will be making these muffins again and again, they were so good and just like I remember.
Mocha Muffins with Coffee Streusel
1 2/3 Cups flour
2 Tbsp cocoa powder
1/2 Cup granulated sugar
2 1/2 tsp baking powder
2 Tbsp instant coffee crystals
1/2 tsp salt
1 egg, lightly beaten, at room temperature
1 Cup milk, at room temperature
1/2 Cup butter, melted and cooled to room temperature
1 tsp vanilla
1 Cup semi-sweet chocolate chips (divided: 2/3 Cup and 1/3 Cup)
For streusel:
3 Tbsp flour
3 Tbsp brown sugar
1 Tbsp instant coffee crystals
1/4 tsp cinnamon
1 Tbsp butter, melted
1) Preheat oven to 400F and line 12 muffin cups with paper liners or lightly butter
2) In a large bowl mix together flour, cocoa powder, baking powder, coffee crystals, and salt, making a well in the center of the dry mixture
3) (NOTE: make sure eggs, milk and butter are at room temperature before mixing or else the eggs will curdle.) First mix together milk and egg, then add butter and vanilla until well combined
4) Add milk mixture to flour mixture and stir until almost combined (overmixing will result in tough muffins, mix until almost all flour has been incorporated.)
5) Fold in 2/3 Cup of chocolate chips and pour batter into prepared muffin tins evenly a bit more than 3/4 of the way full
For Streusel:
6) Mix together flour, brown sugar, coffe crystals, and cinnamon until well mixed
7) Pour butter over mixture and mix until corase crumbs form
8) Top each muffin with 1/2 Tbsp of streusel and bake for 15min or until toothpick inserted in the middle comes out clean
9) While muffins are cooling, melt remaining 1/3 Cup chocolate chips and drizzle over baked muffins, then enjoy!

I drink coffee if I get stress and I make it as part of my diet because it has high antioxidant. In the morning, coffee should be part in my breakfast. I've found this site www.wordse.com that tells great facts about the coffee.
Just tried the Mocha Muffins with Streusel topping because I have been searching for a Mocha muffin. I must say that the muffins turned out exactly like the ones shown in the photo and they rose really nicely. I used a 6-muffin giant muffin pan instead of the regular sized 12-muffin tin and they still turned out great. I didn't get a chance to eat one while still warm from the oven and when I cut into one this morning, they appeared to be quite dry but after being microwaved for 30 seconds, they were moist and yummy. My only complaint is that they didn't have much of a coffee/mocha flavor, more chocolatey than anything but I would still make them again. Also, I'm not generally a big fan of streusel topping so I don't think I would add that next time but overall, this is a really good recipe and uses ingredients that every average baker will have on hand in their pantries.
