Mini Blueberry Lemon Muffins with Lemon Icing
I was at the grocery store the other day and I spotted these bright yellow lemons, I didn't know what I was going to do with them yet but I just had to buy them. After a few days I pondered on what to make when my roommate told me that he was in the mood for blueberry muffins. So I decided to whip up a batch of mini blueberry lemon muffins because I think those two ingredients together have a great flavor combination. The muffins worked out well, very moist and sweet with great tartness form the lemons. The lemon flavoring isn't too overpowering and the icing gives the muffins a nice texture on top. I would have liked it if the muffins browned more on top for nice color but it worked out ok because of the icing on top anyway. I got the recipe from TheKitchn.com, modified it slightly, and posted my half version below.
Mini Blueberry Lemon Muffins with Lemon Icing
1 1/4 Cups flour
3/8 Cups light brown sugar
1 tsp baking powder
1/8 tsp baking soda
1/8 tsp salt
1/2 Tbsp lemon zest (grated lemon peel), about 1 lemon
Juice from 1 lemon
1 egg, lightly beaten
1/2 Cup milk
1/8 Cup sour cream
1/4 butter, melted
1 Cup frozen blueberries, lightly coated in flour
Lemon Icing:
1/2 Cup powdered sugar
1 Tbsp lemon juice
1 tsp lemon zest
(enough warm water to reach desired consistancy)
1) Preheat oven to 350F and grease, or line with paper cups, 24 mini muffin tins
2) In a small bowl comgine flour, sugar, baking soda, baking powder, and salt until well combined
3) In another bowl whisk together lemon zest, lemon juice, egg, milk, sour cream, and butter
4) Add dry ingredients to wet ingredients and stir until just combined (do not overmix)
5) Fold in flour covered blueberries
6) Scoop 1 Tbsp of dough into each muffin tin and bake for 15min or until toothpick inserted comes out clean, cool in pan on rack for 10min
For Icing:
7) Combine all ingredients, adding enough water to reach desired consistancy (you can also add more or less powdered sugar to reach the texture you want)
8) Dip each muffin into icing and let cool, then enjoy!
