Heart Shaped Scotcheroo's
I have a bake sale coming up at work on Friday and I've been trying to find good bake sale recipes that are Valentine's Day related. This recipe for Scotcheroo's originally came from Cookie Madness that I have made before (and were great!) but was inspired by this recipe because of the Valentine's Day theme. This recipe is so easy, fun to make into shapes with the cookie cutters and are so tastey delicious. You could cut these into squares like the original recipe or you can choose another cookie cutter shape of your choice to make them into something more fun. I also didn't want to waste the remaining scrapes from the cookie cutters so I rolled them into balls for a fun little one bite treat. They have a great peanut butter flavor with nice hint of butterscotch and chocolate! I halved the recipe and used rice krispies instead so I've posted my version of the recipe below and posted the original recipe at the top.

Heart Shaped Scotcheroo's
1/2 Cup corn syrup
1/2 Cup granulated sugar
1/2 peanut butter (I used crunchy but you can also use smooth)
1/2 tsp vanilla extract
3 cups rice krispies
3/4 Cups milk chocolate chips
1 Cup butterscotch chips
1) Line and grease a 8in square pan with tin foil
2) In a large saucepan heat corn syrup and sugar over medium high heat until just begins to bubble
3) Remove from heat and add peanut butter and vanilla, and mix until well combined
4) Add rice krispies and stir until well coated
5) Pour mixture into pan and gently even out mixture (Be careful not to press into pan too hard or mixture will become too tough)
6) In a microwave safe bowl melt both types of chips until smooth and creamy
7) Pour chocolate mixture over rice krispie mixture and spread evenly
8) Let sit for 1-2 hours (or place in fridge for about 30 min) just until chocolate is slightly firm, then cut into desired shapes and enjoy
