Easter Egg Cake Pops

Easter Egg Cake PopsI've finally jumped on the cake pop train and joined the crowd in making these fun little treats.  Althought I wish I could take the credit for coming up with the idea for these cake pops, I owe all the credit to Bakerella and her inspiring creations.  I've been meaning to make these for a while now and I figured since easter was just around the corner, what better way to celebrate than by making these famous treats. 

 

 

These were so good, perfect moist cake Easter Egg Cake Popstexture on the inside and a sweet crunchy outside.  Although time consuming, these treats were easy enough to make, I just followed Bakerella's insturctions step by step.  Along the way of making these I found a few tricks that helped me out.  I used both store bought cake mix and store bought cream cheese icing, but I only used about 3/4 of the icing and found it to be just enough (anymore and the cake balls would have been too moist to handle).  I found freezing the balls for an hour really helped before dipping them into the chocolate coating. 

Easter Egg Cake PopsI also just microwaved the chocolate coating using 30sec intervals, stirring after each time, rather than using a double broiler.  The deeper the microwave dish the better because the cake pops look better if you just dip them once into the chocolate coating and swirling it.  I found that tapping the excess chocolate off lightly while slightly rotating the pops at the same time helped to create a better smooth outside.  Overall these were outstanding and I would make them again in a heart beat, thanks Bakerella!
