Dark Chocolate and Raspberry Cornmeal Muffins
Yes, I know what your thinking "another muffin recipe" but this time I have an excuse, it's for the bake sale at work tomorrow. I was inspired to make these muffins because of the addition of cornmeal to them and remembered how good the scones I made with cornmeal were. The muffins turned out great, they have such a nice sweet flavor and the combination of dark chocolate and raspberries are perfect together. The texture is nice and moist with a bit of crumbly texture from the cornmeal which creates a nice combination in your mouth.
These muffins make a great treat
for a Valentine's day gift or maybe even breakfast in bed with a nice cup of coffee. I got this recipe from Joy of Baking again and posted it here for you to try. I didn't change much about the recipe except omiting the lemon zest and adding 1/2 Cup of dark chocolate chips. I incorporated the chips with the frozen raspberries and tossed them in the flour mixture as well before adding them to the batter. Now I'm just waiting for my cake to come out of the oven for the bake sale, wish me luck and i'll let you know how it turns out.

Look amazing! Like something you'd get at Cafe Crepe!
See you tonight! Happy.... Birthday? Oh by the way this is Alex, not Jennifer, haha.
