Cranberry Orange Scones for Mother's Day
It's almost Mother's Day and as I've mentioned before my mom is obsessed with scones, she probably has about 20 different scones in her freezer right now. I thought a big batch of scones to add to her freezer collection would be a perfect idea for a Mother's Day present. I got the recipe from All Recipes while searching for Mother's Day desserts and I knew I just had to try it for my mom because of all the great reviews. I decided to add whole frozen cranberries and a bit of orange zest and juice to the recipe to give my mom a new flavor to add to her collection.
I added 1 Cup of frozen cranberries lightly coated in flour and folded into the batter at the end just before I kneaded the dough. I also added the zest of one whole orange (about 1 Tbsp of orange zest) to the flour mixture and added 2 tsp of orange juice to the egg and sour cream mixture. Mine baked for a bit longer than the recipe stated but I waited until the bottoms had a nice even coat of golden brown on the bottom. The scones turned out well, my roommate said they had a great crisp outside and a perfect moist inside. The cranberries added great texture and the hint of orange flavor was perfect and didn't overpower the great butter flavor.
