Coffee Cake
I got this recipe from my 'Better Homes and Gardens: Cook Healthy Today' cookbook in the breakfasts and brunches section. The cake turned out really well and had a great cinnamon coffee flavor. The batter was a bit sticky to work with but in the end it tasted very light and airy. I changed the recipe slightly by substituting white sugar for brown sugar (in the coffee/cinnamon mixture) and used vanilla yogurt instead of plain low-fat yogurt. Here is the recipe below so you can also try this coffee flavored quick cake.
Coffee Cake
1/3 Cup brown sugar
2 Tbsp instant coffee crystals
1 1/2 tsp ground cinnamon
1 1/2 Cups flour
1/2 Cup white sugar
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 slightly beaten egg
1 8-ounce carton of vanilla yogurt
3 Tbsp butter, melted
1 tsp vanilla
(Optional: 1/4 Cup chopped walnuts)
1) Grease an 8in square baking pan and preheat the oven to 350F
2) In a small bowl combine the brown sugar, coffee crystals, and cinnamon until well mixed and set aside
3) In a seperate large bowl stir together flour, white sugar, baking powder, baking soda, and salt and set aside
4) In another large bowl whisk together egg, yogurt, butter and vanilla until well mixed
5) Add yogurt mixture to flour mixture and gently stir until mixture becomes moistened
6) Spread half of the batter into the prepared pan, then sprinkle dough with half of the coffee/cinnamon mixture
7) Drop remaining dough by spoonfuls over mixture and spread batter evenly (this may be harded to spread because of the sticky dough but try your best), then sprinkle remaining coffee/cinnamon mixture over the dough (Optional: sprinkle with walnuts)
8) Bake for 30-35min or until toothpick inserted comes out clean, serve warm or at room temperature and enjoy!

saw this today and had to make it. i was fairly certain i had everything o printed it off and headed into the kitchen, ended up
subbing sour cream for the yogurt and chocolate Ovaltine for the coffee and adding some mini chocolate chip to the topping.
had a delightful airy crumb and was so moist and easy to put together.
Will definitely make again but will add a tad more vanilla
