Chocolate Toffee Tiffin
This wonderful treat can be made many of ways but the traditional one's have chocolate and broken biscuits as the two main ingredients. This recipe link includes more information of what a "tiffin" actually is but in my opinion it's a delicious chocolate crunchy treat. I found this recipe on Cookie Madness a long time ago and made it once before. I wanted to make my boyfriend a little something to pack into his lunch for work this week and I had a lot of chocolate in my house for some reason so I thought I would give this recipe a try again. I changed the recipe slightly and I've posted my adapted version below. It's got great chocolate flavor with just the right amount of toffee flavor and crunch, and the addition of graham crackers as the biscuits give it a great constrasting texture to the smooth chocolate. Feel free to add or omit anything to this recipe, that's what a "tiffin" recipe is for.
Chocolate Toffee Tiffin
1/2 Cup butter, cut into pieces
1 1/2 Tbsp corn syrup
1 1/2 Cups milk chocolate chips (or 8oz of chopped up milk chocolate bar)
1 1/2 Cups broken graham crackers (I used approx. 20 graham crackers)
1/2 Cup Skor toffee bits (or broken up toffee pieces)
1/2 Cup dark chocolate chips (100g dark chocolate bar broken up)
1) Line an 8in pan with parchment paper and set aside
2) In a large microwave safe bowl combine butter, corn syrup, and milk chocolate
3) Melt in microwave on 20sec intervals stirring each time until mixture is smooth and melted
4) Break full graham crackers into big (or small if you desire) chunks with hands and add them to chocolate mixutre along with the Skor toffee bits
5) Stir until everything is well covered in chocolate and pour mixture into prepared pan evenly
6) In a small heat proof bowl, melt dark chocolate in microwave stirring every 10sec
7) drizzel dark chocolate on top of milk chocolate mixture and spread evenly to create a smooth top
8) Leave out to set or place in fridge to have it set faster, once firm cut into bars and enjoy!
