Chocolate Buttermilk Sheet Cake

Chocolate Buttermilk Sheet CakeMy friend Steve at work loves chocolate and requested something yummy and chocolatey for his next shift.  So that is when my hunt for great chocolate recipes started.  I first found this recipe on Bake or Break that sounded great, which used this recipe from All Recipes that also had great reviews.  So I specifically went out to the grocery store to buy buttermilk to make this cake for Steve, but when I got home my internet was down again and I didn't write down the recipe from before hand.  So in my frustration I started searching my cookbooks for a yummy buttermilk chocolate cake and found one that appealed to me in my Better Homes and Garden cookbook. 

 

The cake turned out great (Steve was satisfied and my mission was accomplished) it was moist, chocolatey, and defintely yummy! I would definately make this cake again, or maybe even try the first recipe I found on Bake or Break and compare the two (even though they're very similar recipes).  I made a half version in an 8*8in pan for 35min @350F but im posted the orginal full version below so you can enjoy more cake!

Chocolate Buttermilk Sheet Cake

2 Cups all-purpose flour
2 Cups Sugar
1 tsp baking soda
1/4 tsp salt
1 Cup butter
1 Cup water
1/3 Cup un sweetened cocoa powder
2 eggs
1/2 Cup buttermilk

(For Frosting):
1/4 Cup butter (cutting it up makes it easier for melting)
3 Tbsp unsweetened cocoa powder
3 Tbsp buttermilk
1/2 tsp vanilla
2 1/4 Cups powdered sugar (sifted)

1) Preheat oven to 350F and grease and flour a 13*9*2 baking panChocolate Buttermilk Sheet Cake
2) In medium bowl combine flour, sugar, soda, and salt and stir together then set aside
3) In medium saucepan bring butter, water, and cocoa to just a boil stiring constantly then remove from heat
4) Add butter mixture to flour mixture and beat with electric beater on medium high speed until well combined
5) Add eggs, buttermilk, and vanilla to mixture and beat for 1min (mixture will be thin)
6) Pour batter into prepared pan and bake for 35min or until toothpick in center comes out clean
7) Cool in pan on wire rack while making frosting
(For Frosting):
8) In medium saucepan bring butter, cocoa, and buttermilk to boil then remove from heat
9) Add vanilla and sugar and beat until smooth (add coarsely chopped pecans if desired)
10) Pour warm frosting over cake, spread evenly, and enjoy!
