Chocolate Birthday Cake

It was my mom's birthday this week and I let here choose the type of cake she wanted for her birthday. As I've mentioned before in my previous posts my mom is a big chocoholic, so it wasn't very surprising when she asked for a chocolate cake for her birthday. I have a few good chocolate cake recipes that I have made before but I never like to make the same thing twice so I decided to try out some new recipes for this birthday cake.

After finding this recipe for 'The Best Frosting I've Ever Had', I knew I had to find some way to incorporate it into the cake. Then I decided to try out Hershey's 'Perfectly Chocolate' Chocolate Cake recipe because it seems that I'm the only person on the planet who hasn't tried this cake recipe yet. Then I decided to frost the whole cake with a whipped cream forsting (I used 2 Cups of whipping cream and beat it on high until soft peaks formed then I added 1/4 Cup powdered sugar and 2 tsp of vanilla and continued beating until cream formed firm peaks) then I covered the top of the cake with white chocolate shavings.

The cake itself was perfect just like how Hershey's described it. It was moist, light and full of good chocolate flavor. It was very easy to make and is a very versitile recipe as well. The frosting was exactly like what it is called - the best frosting I've ever had. It was creamy and worked great with the cake. I decided to make it a chocolate frosting instead of a vanilla frosting by substituting 2 of the 5 Tbsp of flour for cocoa powder and it worked out well.

The whole cake overall worked out really well and everyone gave it two thumbs up. My mom says this is her new favorite cake and wants it everytime it is her birthday. Happy Brithday Mom
