Chocolate and Peanut Fudge Bars
I got alot of different descriptions about this recipe including, a melty chocolate treat, a small Snicker Bar, a fudgey brownie, sweet and peanuty, and mmmm! I thought these mini bars worked out well but not quite how I thought they would. I made these for my boyfriend's step-dad Dave because I remembered how much he enjoyed my Snicker Bar Brownies the last time I came over. So decided I wanted to make him something similar with just the same amount of chocolate yumminess. I found this recipe that seemed perfect and just unique enough that it made me tempted to try it. The bottom of the bars turned out well giving a very chewy, almost melt in your mouth, smooth texture with great crunch and flavor from the many peanuts. The top was a nice touch that I added to give the bars a bit more sturdy texture and peanut flavor as well. I've posted my adapted recipe below for you to try and also posted the original reicpe above because I think they will produce a slightly different result.
Chocolate and Peanut Fudge Bars
1/2 Cup smooth peanut butter
1/3 Cup corn syrup
1/3 Cup chocolate syrup
1/2 Cup cocoa powder
1/4 Cup brown sugar
3 Cups miniature marshmallows
1 tsp vanilla extract
1/4 tsp salt
1 1/2 Cups unsalted peanuts
For Topping:
8 ounces semi-sweet chocolate chips
1 Tbsp butter, plus 1/2 tsp butter
1/4 Cup smooth peanut butter
1) Line an 8in pan with parchment paper and spray with a non-stick spray
2) In a large saucepan melt peanut butter, corn syrup, chocolate syrup, cocoa powder, and brown sugar over medium high heat bringing mixture to a boil, stirring often
3) Once mixture boils, reduce heat to low and stir in marshmallows until mixture is smooth and melted
4) Remove from heat and add vanilla, salt and peanuts and stir until well mixed
5) Press mixture into pan evenly and set aside
For topping:
6) In a small microwave safe bowl, melt semi-sweet chocolate and 1 Tbsp butter in microwave until smooth and melted
7) Pour melted chocolate onto peanut mixture and spread evenly
8) In another small microwave safe bowl, melt peanut butter and 1/2 tsp of butter until smooth and pour over melted chocolate mixture
9) Using a knife, mix melted peanut butter mixture with melted chocolate mixture creating a swirl pattern on top of bars
10) Let cool in fridge until set then cut into squars and enjoy! (Can be stored in fridge or at room temperature)

I like these - I skipped the frosting b/c they are good enough plain (and I'm lazy).
