Butter Tarts

When I was little I remember my Grandma used to always bake butter tarts for my Dad but I would never eat them because they had raisins in them. Now that I eat about almost anything, I love butter tarts and this was the first time I had ever made them before. They were way faster to make than I expected and turned out surprisingly well. I just used store bought frozen pastry shells and used this recipe from Joy of Baking for the filling.

I omitted the nuts from the recipe because I am a little broke from all my Christmas shopping (and from spending too much in Australia) but I had jsut enough money to buy raisins. The tarts were firm but soft (not runny) and had a great brown sugar and butter flavor to them. The raisins were a nice surprise on the bottom of the tart and complimented well with the sweetness of the tart.

I posted the link above which also includes a recipe for tart shells but frozen one's worked just as well. I think my Grandma and Dad would have been proud and enjoyed these butter tarts as much as I did.
