Breakfast Cereal Cookies

Breakfast Cereal CookiesI felt like a hearty cookie today so I decided to make a breakfast cookie since I've never attempted to make one before.  There are many really good breakfast cookie recipes out there, and I particularily like the ones found at Cookie Madness.  But the recipe that I choose, I found in my '100 Best Bake Sale Recipes' cookbook.  I changed the recipe slightly and the cookies turned out really well.  The were big enough to fill you as a snack, the were hearty enough with just the right amount of oats and raisins, they were sweet enough from the combination of honey and sugar, and the were just the right texture - a mix between chewy and crunchy from the Corn Flakes.  My boyfriend loved these cookies and almost ate all them in one day.  Here's my adapted version of a sweet, crunchy and chewy breakfast cookie.

3/4 Cups butter, softened
1 Cup granulated sugar
2 Large eggs
1/4 Cup honey
1 1/3 Cups all-purpose flour
2/3 Cups oats
1 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
2 Cups Corn Flakes
3/4 Cups raisins

1) Preheat oven to 350F and line two cookie sheets with parchment paper
2) Beat butter in a large bowl, then add sugar, honey, and eggs and beat until well combined
3) In a seperate bowl mix flour, oats, baking powder, cinnamon, baking soda, and salt
4) Slowly add flour mixture to butter mixture and stir until blended
5) Add Corn Flakes and raisins and fold into mixture until just mixed
6) Scoop 2 Tbsp of dough onto cookie sheets and bake for 18-20min (mine took 17.5min) or until golden brown
7) Cool on cookie sheets for 2min then transfer to cooling racks and enjoy!
