Apple and Pumpkin Spice Cake
I've been eyeing this recipe for a while and have been dying to make it eversince I found it. Since I'm just a beginner baker I still don't have a springform pan and wanted to make a smaller cake anyway because it was only for a small thanksgiving. I found a pumpkin spice cake recipe in my Better Homes and Garden cookbook that sounded very flavorful and worthy to make. The recipe called for baking it in two 8in pans or one 13*9in pan but I didn't need that much, so I divded the recipe in half and baked it in one 8in pan. I also decided to add the apple streusel topping from the Zoe Bakes website on top of my half version pumpkin cake rather than a frosting.
The cake worked out great, the apple cinnamon combination blended well with the moist spiced pumpkin bottom. I served it with ice cream and the four of us almost finished the whole cake, we all ended up having seconds! Below I've posted my altered half version for you to try because it worked out so well.
Apple and Pumpkin Spice Cake
(For apple topping)
2 granny smith apples (peeled and thinly sliced)
1 1/2 Tbsp butter
1/2 tsp cinnamon
1 1/2 Tbsp sugar
(For pumpkin pie)
1/4 Cup butter (at room temperature)
1 egg
1 Cup all-purpose flour
3/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
3/4 Cups sugar
1/4 tsp vanilla
1/2 Cup buttermilk
1/4 Cup canned pumpkin
(For struesel topping)
1/4 Cup flour
1/4 Cup brown sugar
1/4 cup butter (cold and cut into pieces)
1/4 tsp cinnamon
1) For apples: In a medium saucepan over medium high heat, saute apples and butter until apples are slightly soft, then remove from heat and toss in sugar and cinnamon and set aside
2) For pumpkin cake: Preheat oven to 350F and grease and flour an 8in baking pan
3) In medium bowl mix together flour, baking powder, baking soda, cinnamon, and pumpkin spice then set aside
4) In medium bowl beat butter with electric beaters on medium high speed for 30sec then add sugar and vanilla and beat until well combined
5) Add egg and beat until batter is well combined
6) Alternately add flour mixture, buttermilk, and pumpkin to butter mixture beating on low speed after each addition just until combined
7) Pour batter into greased pan then add apple mixture evenly on top
8) For streusel: In a medium bowl combine flour, sugar, butter, and cinnamon and mix with pastry blender until coarse crumbs form then sprinkle evenly over apple layer
9) Bake for 30-35min or until toothpick inserted in middle comes out clean
10) Cool on wire rack then remove from pan and serve with ice cream and enjoy!
