Cupcake Burgers
Once again I was inspired by one of my favorite bakers, Bakerella, to make something out of the ordinary. When I discovered this recipe on her website I just fell in love and had to find an excuse to make them. My work was planning a picnic at the beach and I thought what a great event to whip out these cute dessert burgers. They were fun to make and obviously tasted amazing because who wouldn't love a brownie sandwiched between a cupcake filled with icing. I had a little extra dough at the end so I made some mini cupcake burgers as well using my mini muffin tin.
A Frog Themed Baby Shower
My girlfriend at work Rosie asked me to help her bake for her sisters baby shower. Of course I couldn't refuse the chance to bake, especially if it is for a party that is frog themed! Unfortunately, Rosie neglected to tell me that this party wasn't just for a small group of ladies but instead, was for a group of 100 people! So after a week of brain storming cute frog themed dessert ideas, four hours of baking 40 frog cake pops and 50 frog decorated cupcakes, we managed to pull it off just in time for this weekend. Both desserts worked out well and Rosie wrapped them in clear bags with green ribbons and gave them away as party favors.
We decided to use the same recipe for the Frog Cake Pops that I used for my Easter Egg Cake Pops that I originally got from Bakerella's website. We used white chocolate chips for the eyes, large star sprinkles for the feet (we just picked out the green ones), and chocolate frosting for the eyeballs and the smile. For the frog decorated cupcakes, we just made classic white cupcakes from the box and decorated them with blue frosting to represent water. We also used green gummy frog candies and homemade flower candies to decorate the cupcakes. I just made the flower candies using colored candy melts and a plastic flower mold. It was a fun day of baking and a great theme idea for a baby shower.
Chocolate Chip Cookie Cake
Who doesn't love one great big chocolate chip cookie?! When I saw this recipe on Diana's Desserts I was so drawn to it because of my love for chocolate chip cookies. The only change I made to the recipe was using 3/4 Cup brown sugar and 1/4 Cup granulated sugar. It turned out well; the recipe was easy to make, just like making regular chocolate chip cookies. Whipped Cream Pound Cake
It's almost spring time and today I was in the mood for a fresh and sweet cake. This cake was full of great vanilla sugar aroma that filled the house with a great smell of spring. I had some whipped cream left over from my tartlet recipe that was about to expire soon, so when I found this recipe, I thought it was the perfect way to use it up. This cake worked out so well, it was easy enough to make and the results were delicious. Easter Egg Cake Pops
I've finally jumped on the cake pop train and joined the crowd in making these fun little treats. Althought I wish I could take the credit for coming up with the idea for these cake pops, I owe all the credit to Bakerella and her inspiring creations. I've been meaning to make these for a while now and I figured since easter was just around the corner, what better way to celebrate than by making these famous treats.
Moist Chocolate Cupcakes and My Mom's Birthday Cake
My friend Dulce at work was kind enough to switch shifts with me so that I could go to my soccer practise. As a thank you, I offered to bake her what ever she would like, and she choose a classic chocolate cupcake. My favorite way to make chocolate cupcakes is to have a very moist cake and yummy rich white icing. I found this recipe on Southern Living and amongst my search I also noticed that RecipeGirl used it on her website as well.
Chocolate Layer Cake with Fudge Icing
I was going to my girlfriend's mom's house for dinner tonight and I offered to make dessert, so my girlfriend told me to make anything as long as it has lots of chocolate in it. So I decided to satisfy her craving with this chocolate layer cake with fudge icing. As it turned out, my girlfriend forgot to tell her mom that I was bringing over a cake so her mom also made a chocolate cake and everyone had two slices of each chocolate cake for dessert tonight and we are all very full and satisfied The cake worked out well, it had nice moist layers that went well with the sweet and hard fudge icing. I cut the cake into four layers and didn't quite have enough icing because of that but if I were to make it again I would double the icing recipe or only make the cake with
Chocolate Fudge Cake (and Happy Valentine's Day)
Not only did we have a bake sale at work yesterday, but we also had a cake walk. A cake wake is kind of like musical chairs but with numbers on the floor instead of chairs and cake as the prizes! I made this Hyde Park Fudge Cake that I found on Cookie Madness that turned out pretty well. I never got to eat it but I did eat some of the scrapes that got stuck to the bottom of the pan and it was deliciously fudgey! The icing looks a little messy but but I think it gives the cake character and makes it look all the more chocolatey and yummy to eat. I really enjoyed the sheen and texture of the icing for this cake and will definitely use it
again for another recipe.
I add two tsp of water to the icing like Anna mentioned at the end of her recipe to give it more sheen. I wasn't able to attend the bake sale at work yesterday but I was told that all my goodies sold fast and the cake was a popular hit as well. I would definitely make this cake again especially for that someone special who has a chocolate sweet tooth. I've posted the recipe above and didn't make any changes because it sounded to good to change.
Apple and Pumpkin Spice Cake
I've been eyeing this recipe for a while and have been dying to make it eversince I found it. Since I'm just a beginner baker I still don't have a springform pan and wanted to make a smaller cake anyway because it was only for a small thanksgiving. I found a pumpkin spice cake recipe in my Better Homes and Garden cookbook that sounded very flavorful and worthy to make. The recipe called for baking it in two 8in pans or one 13*9in pan but I didn't need
Nectarine Coffee Cake
This recipe was not one of my favorites but my co-workers seemed to really enjoy it! I thought the middle nectarine layer tasted the best, it was a good combination of sugar and sweet fruit. I found the cake to be a tad on the dry side but it still had great flavor and worked well with the gooey fruit middle. The crumble on top also didn't turn out how I would have preferred but you can change that easily and add different flavor components. I think I would have prefered a crumble topping with brown sugar like this recipe or this recipe to help give it a bit more
